If you plan to convert from MBR to GPT - always have a proper back-up should it happen so that something goes wrong. Benefits are the ability to store different kind of information on certain partitions and if it becomes necessary to delete some (not all). For the user there is not much of a benefit for having 5-10 separate partitions on a single HDD/SSD. This is a benefit for vendors with specific needs (like HP and Microsofto integrating multiple partitions - like OS, recovery, system tools, etc.).
